An unsatiable craving for pork

I've recently had an unsatiable craving for pork crackling. This is an about turn from 2001 to 2006 when I completely went off pork after a fair few dishes that smelt like sweaty swine.

Recent attempts to satisfy this desire for hog from a local rare breed pig farm and then a local farmer's market failed to eventuate.

In desperation, I tasked the missus with a mission to find some pork on Friday. She came through with brilliant colours - a huge slab of pork belly for roasting.

Salting to dry out the skin for crunchy crackling took an hour. Cooking time - 1 hour 15 minutes. The result was a satisfied couple tucking into tender pull-apart pork with crackling that's crunchy yet lightly chewy. OH. SO. GOOD!

Saturday morning comes around and I failed miserably in my attempts to drag my body out of bed and onto a bicycle.

While making brekky, we finished the leftovers of pork and crackling. As I was tucking into my passionfruit and white chocolate scone, the missus enquires, "What are you eating? What's that crunching?" I replied it was the passionfruit seeds in the scone.

"Oh, okay... I thought you hid some pork crackling for yourself!" *boom-tish* Talk about the both of us having an unsatiable craving for pork.

Fortunately, we were off to dinner to celebrate Joe's birthday in a few hours and pork was going to feature twice on the menu - roast pork and pork wellington. I had two serves off roast pork with crackling. Ah, the joys of cycling... :)

I doubt my craving for pork has been quenched, merely placated...
